Go for the K2 and add accessories as needed, you won't regret it and you'll have a heck of a lot of fun building it as well.  Won't get that experience and excitement out of the FT-817.  Why the K2 vs K1?  Well you mentioned wanting to do digital modes at some point.  Those require SSB since they are done by feeding audio tones into the mic input.  While there is an SSB mod for the K1 it is unofficial and probably not something a new builder would want to attempt.  So start with the basic K2, have fun on CW while building the options then move on.  When you upgrade beyond your Foundation license, you'll be set for SSB ig you have already gotten that module to work the digital modes.
