Ed,
If your ears have 'perfect pitch' you will not need Spectrogram to set the
BFO frequencies right on the passband peaks for the CW filters, but for
those of us with lesser 'ear ability', the visual display afforded by
Spectrogram is indeed helpful.

Not only is it helpful, but I feel it is a necessity when aligning the BFOs
for SSB and/or RTTY modes - where one must align the passband, not at the
peak, but to fall between the lowest and the highest audio frequencies that
you wish to be contained in the final output.  For instance, with a 2.0 kHz
wide filter used for SSB, one would likely want to align the BFO so the
passband falls between 300 and 2300 Hz of recovered audio.  Detecting the
skirt falloff of the filter at the same time as detecting an exact pitch by
ear is a task that few folks are capable of accomplishing - but with the
Spectrogram display, the relationship can be seen with one or two glances at
the monitor screen.
