I have built many circuit board projects & kits both professionally and for personal use over the years and have had virtually zero problem with solder joints.

The technique I use was taught to me by a very picky fellow a number of years ago:  

Solder the joint, clip the lead off then resolder with a very light touch and minimal solder to reliquify the joint.  

This allows you to "see" the joint again and get a very nice bead appearance.  I have never had problems with overheating of components but the technique must be quick.  I also use a magnifier.  After the second soldering you can inspect the board very carefully and you can clearly see any joints that have not been "cleaned up" with resoldering.
