Tim,

With any *decent* mixer, you can do what you describe.  It will all depend
on how you set up the bussing of audio.  With my mixer, I have the ability
to "solo" a channel so, if I want to hear THAT channel and *ONLY* that
channel in the monitors, I simply hit the "rude solo" button and that's
all that I hear.  Again, it all depends on how you interface the mixer to
your receivers.
