Andy,
I would be concerned that the wrapped wire method would introduce unwanted
inductance in the ground lead.
A very standard way of grounding crystal cans in industry is to simply sweat
solder a short straight wire from the can side near bottom, (Not at the
bottom seal), straight down to the nearest ground hole in board. That will
effectively ground the whole can with minimal series inductance, and low
risk to crystal overheating. Especially if you pre tin the wire end and the
can before joining them.
