For two bands, I'd go with 40 and 20 -- unless you are a "dyed in the 
wool" 30 meter fan.  40 is a good daytime band with good DX potential

BUT -- I'd bite the bullet and get the 4-band version with 40, 30, 20 
and 15.

Make sure you have a good temp controlled soldering iron, small 
sidecutters, magnifying glass, etc.  If you have not done a kit for a 
while, you might want to build something small and simple (e.g., an 
audio amp kit) to get back in the swing of things.

I doubt if there are any.  The latest manual (and K1 design) is pretty 
refined.
