I personally use the Sony Professional series headphones.  They will set
you back about $120.00 but the flat, pure response is great and they are
comfortable to wear for hours on end.  (I don't even notice them.)  The
ones I have (don't have them in front of me right this second) cover both
ears so, in noisy operating conditions, you only hear what is in the
phones, not what is going on around you.
