[Elecraft] Calibration setup

Like so many before me, I thought I understood how to do this, but now
find I don't. I'm using Spectrogram with WWV.
 
I set up the LSB BFO to put WWV's 500-Hz or 600-Hz tone on frequency.
However, the pitch changes when I switch from USB to LSB (it shouldn't
do this, right? :-> ) Adjusting the USB BFO moves the WWV tone on
frequency, but the radio seems to "forget" (recalculate?) the USB BFO as
soon as I press a key to "enter" it. 
 
I think I'm following the instructions. Can someone tell me what I'm
missing? I'm starting to lose my mind.
