It would be hard to hammer on the rivet inside. Probably need a C (or G)
shaped riveter to reach up and flare or roll the rivet inside. You might
get there with some special tools made to fit a Whitney-Jensen #XX
punch. It might be a lot easier to find a low radiused pan head 4-40
screw and fill the slot after assembly to make it look like a rivet. It
might be possible to find such a screw with no slot at all.

If I had to replace a jack, I'd probably go to my phono jack drawer and
pick out a Switchcraft with the larger threads that would mount in the
original hole, going for the better quality of the Switchcraft phono
jack.

There are pop type rivets made for aircraft where the pull piece breaks
outside and sticks fast so that it can be machined back flush to the
rivet head but still be installed from the outside. Its popular for
repairing Airstream trailer skins. The rivets aren't cheap and the tool
for finishing them is fairly expensive but does well. Another place that
might have the tools and rivets would be a shop that repairs aircraft
skins.
