There are dozens of oft-repeated stories about the origin of the term.  All of them are absolutely authoritative (just ask their authors), and all of them (with the possible exception of one, and no one knows which one that is) are pure baloney.

The origin of "lid" (and "ham" and others) has been long lost to the sands of time.
