Absolutely. Been a big proponent of this myself for years. It's so
much easier and better to be safe than sorry, or operating vs.
rewinding. The many laminations are great at soaking up moisture over
time, even in a protected area if the humidity is high. Always reminds
me of looking at the grain on the end of a 2x4.

Beyond the baking part is another step that you mention. Many folks
bypass this. Running some juice through the iron at initially low
levels and building up slowly can help drive any remaining moisture
out by internal heating. Someone outlined an easy process for this
recently either here or on the AM reflector.
