Ceramic microphones are high impedance like the
crystal microphones and usually have around the same
output.  Back in the 1950s and 1960s, ceramic
microphones were as plentiful as the crystal
microphones.  However, the ceramic microphones were
not as likely to fail due to high humidity, etc., as
were the true crystal microphones.  

As for sound quality, I really don't remember there
being much, if any, difference.  The original
microphone on the Heath "lunchboxes" ("Tenner",
"Sixer", "Twoer", etc.) were ceramic as were many of
the microphones sold by companies like Allied Radio,
Lafayette Radio, the "original" (before it got bought
out by Tandy) Radio Shack, etc.
