My 2-cents worth would be to proceed as planned and play it by ear, safety first.  Call who you need to cancel or confirm, if you need to vacate due to the heat till later in the day just leave a simple back at ____ sign or two.  Stay in the shade, stay hydrated as needed, if you have AC power at your site bring an oscillating or floor fan or two!  I use small battery powered fans when I do daytime POTA and they help tremendously in hot, little or no wind conditions.  
 
I have two of these for POTA and camping.  They will run a fairly long time and work very well for what they are.

Good afternoon all,
 
In light of the heat this weekend and the poor band conditions currently
being observed in daylight hours. The Field Day planning team with myself
as Chair are considering adjusting the Field Day start time to 7pm and
going to about 9am on Sunday or ending as appropriate for the weather
conditions.
 
We desperately need to know what your thoughts are on these proposed
changes.
