Here is what I suggest you do.

I would use the supplied hand mic  until you get the HC5. The rig is 
looking for a specific input and I doubt a hi-fi element has it.

Listen to yourself in the monitor. Adjust the audio the audio so that it 
sounds good. Leave it alone until you have to readjust it for the HC5.

The carrier offset it used to fine tune audio response. Frankly, many 
hams are not up to messing around with feature and normally screw 
something up. I'd suggest that you reset the carrier offset to the 
factory default and use the TX DSP to tailor the audio.

READ THE MANUAL!!!!! If this doesn't supply you with enough information, 
use Google. There is a LOT of information out there. Don't just rely on 
this group at this moment- search the archives. Many of the topics, 
especially power output and PEP vs. AVG output, have been discussed 
many, many, many times before, in this forum and elsewhere.

Quit comparing the Field to the TS-850. These are very different rigs. 
If your TS-850 showed 100 watts SSB output on that Daiwa meter, it's 
been modified to put out more than 100 watts. This was a very popular mod.

Don't worry so much. If your Field is relatively new, it's probably 
fine. If you have doubts, make sure everything works.
Bad SSB output alone is almost never the symptom of a problem. I n fact, 
this is usually a sign of a crappy meter or someone who doesn't 
understand how to use a wattmeter. When my old Field lost a driver and 
final output transistor, it still put out 100 watts, it's a push-pull 
circuit, afterall. The main sign that I had a problem was my audio was 
distorted and I just never could get it to sound good. But the output, 
on my true peak-reading Yaesu YS-60, was 100 watts or more on every 
band. If you Field puts out 100 watts CW and the audio isn't distorted 
on every setting, then your rig is probably fine.
