Boy this is a TOUGH group Earle!!
I too have an ICOM IC-7300 and a MAC. I use MacLoggerDX with the IC-7300 and no problems. I also used RUMLogNG, also with no problems.
However, I did not get fldigi working yet!! I believe that is all cockpit!! As soon as I finish some personal business, I will be installing WSJT-X and trying that out. 
Under the obvious assumption that I will be unsuccessful, I will likely contact you to go over your settings and see if that helps.
Once we get fldigi working, we will show the rest of them a thing or two!!
