I've been reluctant to reply to this question because I have no actual
experience in the matter.
My take, however, is that a solution of lye (CAUTION!) might be one means
-- but I'm not sure it wouldn't soften bone, the way lye will soften
fingernail, hair, etc.
Another thing that might be worth a try is natural enzymes, like from
papaya (commercial meat tenderizer) or fresh pineapple. These should both
(eventually) dissolve both protein and fat.
Again -- no experience here, just basing these suggestions upon general
knowledge.
