Ayup James, you've hit on the best test of anvil height I know. Too low and 
you "toe" the hammer, (hit the far edge) too high and you "heal) the hammer, 
hit the close edge. Hitting right or left, "in/out" is usually "operator 
error"

Lifting even a really REALLY heavy object isn't hard if you can rock it one 
way or the other. Simply rock it till the stand comes off the floor and slip 
a rod or piece of stock under it near the center is best. now all you need 
to do is rock it the other way using the rod/etc. as the fulcrum and you can 
place the right height piece under the stand a few inches off center. To 
finish rock it up on the new spacer, remove the original fulcrum piece and 
slip another spacer under the stand near the far end. Check for the height 
and when you get it right drive another spacer under the open end and you're 
finished.

It takes longer to write a description than than do it. Really, it's easy 
especially if you have a helper. People move really BIG things this way, 
think barn, shop building or BIG boulders.
