Hi Marc,
Stainless silverware is typically 18-8, a fairly basic austenetic stainless. Heat it to 1850F - 1950F then quench to anneal and insure you don't have chrome carbide formation (brittle) from slow cooling. But unless you happen to have access to an inert atmosphere or vacuum furnace you will have nasty scale to deal with from the annealing process.
