I am not an authority on garlic but I have been watching this thread with interest and posed the following questions at a local garlic festival: 



Have you ever heard of garlic as a metal preservative?  The gentleman said no but he knows that his trimmers which he uses to top the garlic plants, get coated with the very gummy juice from the plants.  The trimmers never rust but need to be "unstuck" to be used each season. 



Which garlic would you recommend for getting the maximum liquid via pressing?   He recommended "brown vesper" so I bought a pound.
