Have you looked at commercial quenching oils? There is one called Thermo-Quench Oil from Park Metallurgical http://www.parkmetallurgical.com/park/products/oil_based_quenchants/oil_based_quenchants
It operates in the 300-450 F range and has a flash point of 545F. That would give you a greater margin of error on your temperatures. I am sure it will not be as cheap as peanut oil but it will probably be a lot more stable over time.
