"Coal" was often used as the term for charcoal before the mining of
fossil coal was common.  Charcoal, of course, need not be separated
from the food, any more than wood does.

You're right that fossil coal would have to be isolated from food.
I've never seen a fossil coal stove intended for cooking, but I don't
know they didn't exist.
