I don't have a hitch mounted anvil, but I do keep a small vise on the hitch 
mount on my Subaru Forester except when I'm pulling a trailer and it has 
proven to be very handy.  Will open up wide enough to hold a flatways 2x4 
among other things and makes a handy step to get at stuff on the roof racks. 
It has a little "anvil" surface for gentle banging.  I also keep two 2x4's 
bungied to both sides of the roof racks which makes a platform to screw 
plywood to, so its  easy to carry a 4 x 8 sheet or scraps.  This arrangement 
also makes a sort of bin into which I throw bags of leaves and etc to bring 
home without fastening for the compost heap.   Once you have the vice back 
there you tend to find uses for it.
