This is exactly what I did, although not by choice.  The zinc is oxidized, 
and then the anode is oxidized.  In non-technical terms, this means that the 
part that your are uncoating turns to rust.  That's why the electrolytic 
gurus always recommend either a stainless anode or a sacrificial material. 
BTW  If you put the coated part on the cathode, such as for cleaning steel, 
you just get clean zinc.
