Here is an alternative to the door hardware that you described. Fastenal 
has stores all over the country.

an inventive person could probably scrounge bearings and such to fab 
these, but at $30 a pop they are hard to beat if you value your labor at 
anything at all.

I would most likely use this for an outside location, but it is 
available in SS if you want.

Neat stuff for brackets and all kinds of fixtures. I was saving strut to 
build a welding table, placed open face up and side by side then welded 
together, (end view UUUUUUUUUUU) which would allow the use of unistrut 
(channel) nuts to hold your clamps or fixtures....problem is the stuff 
also makes great shelves. Oh well, have to start scrounging again.

(grind out the grippers that keep the nuts from sliding under HEAVY 
lateral loads so you don't get a 'cogging' effect if two locations end 
up close to an old spot you clamped).
