Get a vet put in the top of the tent.  That way the smoke will have a way to
exit. If you have a fly on the tent ( the ridge raises up a foot) or so and
have it screened in .  It will vent nicely and still keep out the rain.
Have your sales counter under cover so when it rains they can still buy your
wares.

Thanks for all the useful info everyone. I shall ask for a 9'x 9' tent  with
at least an 8' high rook removing sides and front to demo. I will also get a
rope barrier put up 3  or  4  feet outside the tent

I will forge using coke, but that's pretty much all we use in the UK

This is an excellent marketing tip Phlip.

If they want their fabric, garments, etc. to smell that 
good they should pay for it!
