The short answer is no. The bakers stone gives up it heat very slowly. Stone
will also give off moisture and absorb moisture as it cools. Metal can
transfer heart rather rapidly.  Just a thought

Would a piece of sheet or plate steel heated in the oven serve the same 
purpose as a bakers stone?

How thick? 1/4"?
