And 1 to post something TOTALLY off topic without 
changing or putting OT in the "subject".

I tried the no knead bread last week but there was NO 
WAY I was going to wait 12-24 hrs. for it to rise. So I 
used 1tsp of yeast disolved in the warm 105-115*f water 
with a scant tsp of sugar to give it a goose. Otherwise 
I didn't change anything.

Start to finish took about 2 1/2 hrs and though it 
didn't have the "Artisan" bread look it had a good 
texture, nice crumb and a simple, light flavor. I made 
long rolls for cheese steak sandwiches and they were 
excellent, holding together much better than most rolls 
in the Au Jus.(sp?)

As I thought it's very similar to some of the Itallian 
breads and would probably make excellent Foccia, pizza, 
breadsticks, cheese, garlic and other herb loaves, 
rolls, etc.

My favorite characteristic of this bread is it's 
simplicity and with a little more yeast, speed. making 
a loaf or six of this bread takes no longer than making 
pasta and it's quite tastey.
