While I haven't tried this recipe. . . Yet, It's pretty 
similar to a number of Italian breads I've seen. 
Usually they use more yeast and have more normal 
raising times, 1-3 hrs. Even my sourdough doesn't need 
12-24 hrs raising time. This bread is almost like 
baking the sponge.

The recipe I've been tweeking is the white bread from 
Joy of Cooking. It's the oldest and most popular white 
bread recipe in the book. The bread comes out with such 
a light flavor, butter almost hides it. I had to change 
the amount of liquid as what's called for was WAY too 
dry. Once I get this recipe straightened out I'll start 
playing with some of the others.

Normally I prefer a heartier bread but I need to shake 
the rust off and white bread is the most straight 
foreward. I think the next type will be either cracked 
wheat or whole wheat. Once I have my basic types down I 
can start really playing.

White chocolate cherry bread anyone?
