Chef from hell makes all her breads from scratch and by hand.  The only 
change I injected into this picture of bucolic living was to get her 
mixer-from-hell so she won't further ruin the arm she injured from 
working 2 and 3 jobs at a time for 26 years.  She's earned the help.

Those good stand mixers are pretty amazing actually.  What takes her 20 
to 30 minutes to do by hand is done in 5 or 6 minutes with a dough hook.

Not all technology is bad. :)
