The best product out there is Permalac....specifically formulated for iron.

Automotive clear coat urethane. Even the lower priced brands will last forever indoors. Gloss is infinitely adjustable.
Downside is that if you're just gearing up, might cost you as much as powdercoat. Future projects will be cheaper once you have a spray gun, etc...
