Folks: I can speak for the Certificate Program at Sir Sandford Fleming
college....I graduated from the program in 2002. The smithing is a good
intro, and I found the segments on drawing, architectural design and
portfolio preparation useful. They are also very nice folks to deal with.
The course is 660 hours of instruction and ends with a certificate as an
"Artist Blacksmith."
I have also been teaching basic and intermediate smithing out of my own
shop; the Pilgrim Soul Forge, since 2001. You can check my classes out at:

Southern Illinois University in Carbondale is indeed the big one- the
only place you can get a masters degree in Blacksmithing.
But there is also a college in Ontario,
and Austin Community College in Austin Texas has a good selection of
classes.
Arts centers like Pratt, in Seattle, the Crucible in Oakland
California, and similar spots.
2 day to 2 week workshops at Penland, Peters Valley, the John Campbell
Folk Center, Anderson Ranch, Haystack, and other arts retreats.
The New England School of Metalworking.
Frank Turley teaches two week classes at his shop in Santa Fe, my
friend John took one last year, and he says at the end, you REALLY know
how to forge weld.
So there are probably a couple of dozen places around the country where
you can take anything from a 2 day workshop to a 2 year masters degree
in blacksmithing.
