[TheForge] Maple syrup

One of my earliest memories is of going with my
grandfather to where they made sorghum mo lases. There
was an old mule on a long pole walking in a circle to
run the crusher for the cane. There was a man that
stayed low under the pole to feed the cane into the
crusher and collect the sap.
The liquid was taken to a shed that held a bunch of
shallow pans that were linked so that the sap ran from
the first to the last. Under all the pans was a wood
fire that kept all the pans on a boil. When the sap
reached the last pan it was thickened into molasses.
My grandfather showed me how to take a piece of cane
and dip into the foam that formed on the top of the
pan. Sorghum molasses remains at the top of my list
for sweet treats.
Knife content: I have a cane knife that I bought in a
flea market to remind me of those memories.
