First you have to have the right species of maple= sugar maple. Our maples
down here have mostly water in the sap. Probably less expensive to just buy
it. Some friends make it with sugar cane but the county inspectors are hard
timing them about a once-a-year event.

I have a good off-topic thread I want to start. My sister-in-law just
came out here (Phoenix) for a visit from Michigan. Seems she and some
friends decided they were going to make maple syrup. Well after many
hours of boiling sap they produced about a quart of syrup. Seeing that I
knew nothing about the process I asked many questions. Seems the correct
way to do this is to boil the sap in a huge pot (three foot square but
shallow). In this way a larger surface area can boil off the liquid.
They had used a small turkey boiling pot and single propane burner. I
suggested several burners like I use on my forge mounted in the bottom of
a 55 gallon steel drum and a large stainless steel pan for the maple sap.
So my question to all of you out there that have made maple syrup or know
how to do it, how do you do it? I mean, seems like the use of our
burners (modified forge turned on end) is a great way to produce a lot of
heat.
