Jeff,
It looks like he uses plasticene, an oil based modeling clay. The kind I 
think he uses is white, and there are some small pieces on the table in 
some of the pictures that have been posted.
One of the students (Frank) on his website has some on his table too.
Using plasticene or plastilene lets you work a lot quicker because you 
don't have to deal with the heating of pitch and the cleaning off of the 
piece each time you switch to the other side.
When you use something other than pitch, annealing more often is very 
important. I have found that you have to have the copper as soft as 
possible for as long as possible when using the clay. It (clay) does not 
get as hard as the pitch and offers less resistance to the tools.  
I was amazed by the detail he gets with clay. I switch to pitch for that 
kind of tiny detail at the end of the process.
