Ron,
Color variation isn't the only consideration with some of the 300 series
stainless, notably the very stuff that is most used by the food industry.
Cracking (sometimes months later) at the edge of the heat affected zone is a
very real consideration. This may be the reason he is considering soldering
instead of TIG. After reading various articles on line (Google home-built
beer making equipment for a quick introduction to the subject, but you will
find lots more-if you have the time to look-as warnings attached to various
SS oxy-fuel filler rods), I ran my own experiments with an SS pot, and sure
enough it stress-cracked repeatedly at right angles to various brass and
nickel brazing fillets done on its lip. Just a little thought to help chill
the ardor (If it were me, I'd try threading if at all possible >:)

I've had good luck just welding with ss rod, arc, tig or o/a. No color
variation when polished.
