Simplest thing would be to sign and/or initial every page, but that
could take a while.
There are invisible inks that glow under UV. Marking each page with a
unique stamp in this ink would take less time than signing, while still
making it easy to check. Google turns up dozens of links to places
selling such an ink.
For a really quick, just pick an edge of the pile and coat it with such
an ink. Checking the stack then becomes quick and easy, and each page
can be checked if you suspect certain pages have been modified.
