Chris,
A must is the thermocouple table for the type-K thermocouple.
Ideally, you will use two identical thermocouples, back-to back (so to speak), and put one of them (the "reference junction") in an ice bath.
A close second is to leave the reference junction at room temperature and to subtract that temperature (directly if using Celsius, or subtract then add back 32F, if using Fahrenheit) from the reading from the table.
For furnace temperatures, you can skip the reference junction altogether and measure directly, and your error will probably be so slight as not to matter to you.
Connect one lead to the positive pole of the meter, the other to the negative.  Ignore the sign of the mV reading.  (Or, flip the leads around if you prefer.)  You'll read some value in mV.  Go to the thermocouple table and read what that means in degrees C or F.
