Saint Phlip,
The local USDA / University County Extension Office should still have
pamphlets on how to butcher, Web search would probably yield some "how
to" as well.
First pig that I personally slaughtered was probably my last. That was
more than 15 years ago, and my kids saw it being done and wouldn't touch
a bite. I think that that if one has a real hunger : empty belly for
motivation , or grew up butchering as a child, so that it is a normal part
of life it would be different.
I have also butchered out a couple goats and a half dozen deer, but I
have to say that for us, even with my own home raised hog... having the
meat processed by my local butcher, subjectively makes it taste so much
better.
