Andy,
Nickle fumes and dust are not good for you. Stainless has both nickle
and chrome in it and both are carcinogens so make sure you don't
breathe or ingest the fumes or dust. This is just good basic health
and safety stuff. All arc welding fumes are bad for you and inhaling
dusts and fumes of any kind is just not good so wear a mask rated for
welding fumes or have an air supplied helmet. In its solid form some
people are sensitized to nickle and react with fairly bad skin rashes
from skin contact with almost any metal alloy that contains it.
