I worked on a job once installing an expansion joint on a stack gas
scrubber.  I can't remember whether it was stainless or not but it was
designed like a bellows that had some vertical welded sections plus the
overhead and flat welds all around the perimeter.  It would have been
impossible to grind spatter off the surfaces and the client didn't want any
spatter so they bought an anti spatter product/powder that was mixed with
water to a runny pancake batter consistency and brushed on like paint.
After it dried we went ahead and welded and nothing stuck to it.  It worked
great.  You could have solved your problem with this material.  I never
bought it myself so I don't know who makes it etc.  Worth looking into for
next time.
