Fast enough to give you enough air, and slow enough so it doesn't blow your 
fire out of the pot?

Really, asking that is like asking which way to point an anvil- the correct 
answer being, where it's most convenient for you, the smith. In this case, as 
long as you have enough air, any excess can be controlled by a gate, so it 
really doesn't matter too much. Or, you can do as some of us prefer to do, 
and use a hand cranked blower, or even a bellows.
