If you're pickling anyway (and don't want to takes Andy's advice to
use heat, smoke and oil), try Brownell's Oxpho-Blue.  Pickle, sand- or
bead-blast the metal.  Wipe Oxpho-Blue on at room temp, wipe off.
Possibly rinse if you have lots of little crevices.  (Slight uneveness
in color will even out after a few hours.)  Optional light rub with
4/0 steel wool to remove any traces of adhereing scum that wiping
didn't remove.  Wax, linsseed oil or lacquer to finish.

Pricey by the gallon but a bitsy little bottle will do a raft of door
knockers.  Available at better gun shops.
