My recipe for such things is as follows:
Pickle, sandblast and wire brush to a white surface.  I do not pickle often 
but I do sandblast occasionally and I wire brush all of the time.  I like 
starting with a white surface.
Preheat oven to ~375*F.  Play with what you have to get the right temper 
color that will be your "base coat".  If it is not the right color raise the 
temperature in 25* increments  Bake until golden brown, my preference, for about 
1/2 hour.  The color will darken with the application o fthe oil
Remove and apply a good veggie cooking oil with a paper towel.  Remember that 
the work is hot.  Put on as thin a layer as you can to avoid drips and drabs.
Bake for another 1/2 hour or so.
The surface may be a little tacky when it comes out but it will harden as it 
cools.
Additional thin coats are acceptable.

Or the simple version:

Wipe it, bake it, cool it.
