Philip,

The first grinder you show is pretty much like what I have.  Mine is just
not set up for a motor.  If I were still doing my family's beef, the
combination bandsaw grinder would be great. 

When we butchered beef, we used to saw it down the backbone with a hand bone
saw.  At the shoulder, you were cutting through almost 12" of bone!  That
took us over an hour because you wanted to keep the cut straight so you
didn't ruin the loins.  About 20 years ago, my brother brought over a
sawsall and we all thought duh!!!! What was wrong with us for not using one
of those sooner.  (Of course 20 years ago, most people didn't have a
sawsall.)   Put in a clean blade and did the cut in a couple of minutes.

The trouble with the fancy equipment is that you need a place to keep it and
a justification for having it.  I don't mind cranking a grinder for 40-50
lbs of meat once a year and the grinder fits in a drawer.  I just don't want
to have to clean the sinew out every pound or two.
