Random thoghts here.   Good cutting requires that  you not only set up 
the torch correctly, but also that you maintain the distance from the 
metal and the advance speed just right.  There are a couple of aids for 
this that could help as you develop your technique.  One is a fitting 
that goes over the head of the torch, that has two adjustable legs with 
metal wheels.   This device will maintain a consistent height from the 
steel.   The second device does the same thing, its just fancier,  it is 
an articulated arm that the torch fits in and maintains the height.   
The arm is usually mounted on a dedicated cutting table.   Finally, the 
nicest gas cutting I have seen on thin sections of steel was done with  
the controversial HenRob torch.  It tends to preheat a much smaller 
area, and generally runs at lower pressures.   The guts rival a plasma 
cutter for finish.   As with everything in this profession/hobby, 
experimentation and practice make the biggest difference.
