Andy,
I've cut metal from 26 gauge up to over 5" thick.
Most of the time, a rough cut is caused by setting the gas pressure too
high for the tip size and/or not using the right sized or dirty tip.
You also have to practice moving the tip at the optimum speed for the cut.
Remember you are causing a rapid chemical/thermal oxidation of the cut kerf
not trying to melt the whole cut area or use the O2 to blow away the molten
material.
Get one of those plastic cards from your welding supply store that show the
correct gas pressures and tip sizes for the torch you are using and the
thickness of the steel you want to cut..
Also remember that generally Oxy/ Propane tips tend to cut steel cleaner
than Oxy/Acetylene torches.
