Dan,

I usually buy my stainless stock with a #4 finish but once in a while, 
depending on the job,  I use a belt sander (3x21" Porter Cable).  I 
start with a 36 grit and go up.  This works on 1/2, 5/8 solid squares, 
flats, etc.  I also use a variable speed strait grinder with an  air 
filled drum fitted with  sand paper and non woven, but this is usually 
to blend in welded areas.  If you are going to buy sheets, just get it 
over with, order it finished, cause you will never get a uniform finish 
with either of these methods.  I usually spend around $80 or so for 4x8 
18 guage.  Another decent finish is to just matt it out with a random 
orbit sander with various grits of sand paper and nonwoven.  Or, just 
let all the stuff you are going to slide in and out of your truck brush 
it for you. Ha!  Good luck, hope this helps.
