Andy,
It sounds thin to me also. But never having made one before who am I to
say. We never use anything but cast, I have never used a steel fry pan.
Once upon a time we had an aluminum pan with a teflon coating, it was really
bad.

OK, I will start by saying I'm not a gourmet cook, so I may be
talking through the wrong sphincter. 12 ga. seems a bit light. All
the really good frying pans I've seen were perhaps 10 to 8 ga, or if
the sides are to be thin as 14 ga., the bottoms are often very heavy
in the 3/16 to 1/4 inch range. Then you have those with copper clad
bottoms and all that, but that may be more work than you're wanting
to get into.
