You can buy a pyrometer to measure mokume-gane from most ceramic suppliers.
Mn Clay is one.  I used a pyrometer for awhile, but decided to trust my eyes
instead.  When you use a cheaper pyrometer in a gas forge I would suggest
using a ceramic tube to help keep the probe from melting.  For Damascus, get
a good reduced atmosphere going and use a 1/4" mild steel touch rod for
measuring the welding temperature.  When the rod sticks to your billet, it
is ready to weld.  I have found that in order to have complete success with
mokume you should go to a heat treat furnace for the diffusion.
