We had a great setup in the shop in Mesa.  The casters were mounted on
separate pieces shaped as a 'T' like so:

The little vertical tabs go under the stringers at the bottom of the
legs at the ends of the table.  Their height is about 3/4" higher than
the stringers.  As you swing the vertical member upward, you jack the
table up off the ground and onto the casters.  The lock bar locks into
a catch, such as those for a fabricated metal garden gate.  Away you
role!  Release the catch and swing the vertical member down, away from
the ends of the table, and the legs sit right down.  Only caveat is that
the vert will swing down dangerously fast if you do not maintain careful
control of it, so be careful.

You can make a set of these in about an hour and they will make your 
life a whole lot easier.
